USDA Choice vs Prime Beef
- Choice has moderate marbling and is the second highest grade of beef. Roasts and steaks from the loin and rib will be very tender, flavorful, and well suited for roasting or grilling. Less tender cuts from the round are perfect for braising, or roasting.
- Prime beef has an abundant marbling score and is distinctly superior. Of all beef produced in the United States, only 2% grades prime. It is rarely found in grocery stores, due to the high demand at exclusive upscale restaurants.
