USDA Choice vs Prime Beef

  • Choice has moderate marbling and is the second highest grade of beef. Roasts and steaks from the loin and rib will be very tender, flavorful, and well suited for roasting or grilling. Less tender cuts from the round are perfect for braising, or roasting.
  • Prime beef has an abundant marbling score and is distinctly superior. Of all beef produced in the United States, only 2% grades prime. It is rarely found in grocery stores, due to the high demand at exclusive upscale restaurants.

These USDA Prime Ribeye steaks are the highest marbled of all steaks. They are hand selected by our experienced in-house butchers and aged a minimum of 30 days prior to cutting. These are by far the boldest and richest tasting steaks of all.
